The Landmark Group has always prided itself on it’s commitment to the best ingredients, expert preparation, and remarkable service in all its establishments. The Earth to Table cookbook grew out of the commitment of Corporate Chef Jeff Crump and Pastry Chef Bettina Schormann, and to sustainable farming, local sourcing, and celebrating the best in food. We are proud to continue that commitment, “putting our money where our mouth is” as it were, by investing in the Earth to Table Agricultural Education Centre, also referred to as ‘The Farm’.

We think the Earth to Table philosophy is good for our business, good for our communities, good for our dedicated employees, and good for the environment. We applaud the work Jeff and his team have done in developing this project, and believe by being a leading voice in the industry on behalf of farmers and farming, the Landmark Group has differentiated itself from other companies who serve the same public.

Mapleton’s Organic Dairy – a family owned and operated farm. They raise and care
for the cows that supply the milk for the delicious ice cream, frozen yogurt, and fresh yogurt. Besides a dairy herd, they also raise young dairy animals, a flock of laying hens to supply eggs the our ice cream, and pigs for organic pork.Mapleton’s Organic Farm provides the public with healthy, local, and environmentally sustainable products. But they also believe they have the responsibility to show young people about the cycle of responsible food production. Ocean Wise – The fish we serve in our dining rooms is certified by Ocean Wise. Ocean Wise is a Vancouver Aquarium conservation program created to educate and empower consumers about the issues surrounding sustainable seafood. Ocean Wise works directly with restaurants, markets, food services and suppliers ensuring that they have the most current scientific information regarding seafood and helping them make ocean-friendly buying decisions. Forsyth Farm – We have been buying lamb from Brenda & Shane Forsyth for over 10 years. Their farm is a family farm that has been operating in Grey County for thirty years. The primary focus of Forsyth Farms is lamb and beef but they also raise a small complement of ducks, chickens and Berkshire hogs.
